Usage Instructions:

  1. Prepare Ingredients:

    • 1½ kg chicken portions chopped to desired size
    • 3 onions peeled and chopped
    • Oil for frying
    • 3 garlic cloves peeled and crushed
    • 2 teaspoons crushed ginger
    • 3 medium potatoes peeled and cubed
    • 2-3 medium to large carrots peeled and diced
    • 1 can of peas
    • 1 can of yellow corn
    • 250g dried apricots soaked in warm water and drained
    • 2 tablespoons of tomato paste
    • 500ml chicken stock
    • 1½ cups Basmati or long grain rice
  2. Cooking Method:

    • Heat the oil in a large pot, sauté onions and spices from (pouch 1 - seeds), stirring frequently until onions are translucent to golden brown.
    • Add garlic, ginger and contents of (pouch 2) and stir-fry until spices become fragrant.
    • Reduce heat slightly, add the chicken and spices from (pouch 3) and stir-fry till chicken is cooked taking care not to burn the spices. Add chicken stock if contents start to stick.
    • Add tomato paste, potatoes, carrots and simmer for 10 minutes stirring frequently.
    • Slowly add contents of (pouch 4) bit by bit, tasting frequently till desired taste (strength) is obtained. Reduce heat and simmer for 45 minutes stirring occasionally till chicken and potatoes are done.
    • Stir in drained apricots, peas and corn and simmer until apricots are soft.
    • Prepare rice with contents of (pouch 5) according to the instructions on rice pack.
    • Serve garnished with crispy salad, chutney, desiccated coconut, sliced banana, or dollop of Greek yogurt or sour cream mixed with finely chopped coriander leaves and a squirt of lemon.

Storage Instructions:

  • Store in a cool, dry place away from direct sunlight.
  • Use within 6 months of opening.
