Usage Instructions:

  1. Prepare Ingredients:

    • 1½ kg lamb or mutton cutlets into bite-size pieces
    • Oil for frying
    • 2 medium onions peeled and chopped
    • 3 garlic cloves, minced
    • 2 teaspoons crushed ginger
    • 1 teaspoon grated lemon rind
    • 1 green pepper seeded and diced
    • 2 green chilies seeded and chopped
    • 3 medium tomatoes skinned and grated
    • 4 medium potatoes peeled and cubed
    • 3 cups of water
    • 1½ loaves (unsliced) white bread
  2. Cooking Method:

    • Heat the oil in a large pot over medium heat and add the contents of (pouch 1 - seeds) and stir fry until spices are fragrant.
    • Add onions, garlic, ginger, lemon rind, and contents of (pouch 2) continue stirring until onions are translucent to golden brown.
    • Add green pepper, chilies, and mutton together with contents of (pouch 3) and cook until mutton is browned all over. Add water if ingredients start to stick to the bottom of the pot.
    • Stir in the tomatoes and potatoes.
    • Cover the pot, reduce heat and simmer on low heat adding contents of (pouch 4) bit by bit until desired taste (strength) is obtained stirring occasionally until everything is tender, approximately 1½ - 2 hours. Add water to pot if texture becomes too thick or starts to stick to the bottom of the pot. The curry must be gravy but not watery.
    • While the pot is simmering, cut the bread in quarters and hollow out the center of each quarter leaving 1 cm wall around the sides and bottom.
    • Ladle the curry with gravy into the bread.
    • Garnish with crispy salad or sambals.
  3. Serving Suggestions:

    • The only way to enjoy this meal is to eat with your fingers using the bread as your eating utensils. Feel free to lick your fingers.

  • Store in a cool, dry place away from direct sunlight.
  • Use within 6 months of opening.
