Usage Instructions:

  1. Prepare Ingredients:

    • 1½ kg lamb cutlets with bone or 750g deboned
    • Oil for frying
    • 3 crushed cloves of garlic
    • 2 medium onions chopped
    • 2 teaspoons crushed ginger
    • 1 green pepper seeded and chopped
    • 1-2 green chillies seeded and chopped
    • 3 medium tomatoes skinned and grated
    • 1½ cups lentils
    • 1 teaspoon lemon rind
    • 1½ cups Basmati or long grain rice
    • 500ml mutton stock
  2. Cooking Method:

    • Heat the oil in a large pot over medium heat and add the contents of (pouch 1 - seeds) and stir until fragrant.
    • Add onions, garlic, ginger, lemon rind, chillies, green pepper and contents of (pouch 2) and continue stirring until onions are translucent to golden brown.
    • Add the meat together with contents of (pouch 3) and cook meat until brown all over.
    • Stir in the tomatoes, cover pot, reduce heat and simmer on low heat adding contents of (pouch 4) bit by bit until desired taste (strength) is obtained. Stirring occasionally. Add mutton stock simmer until lamb is cooked and tender.
    • Prepare rice with contents of (pouch 5) until half done. Rinse thoroughly and place aside.
    • Wash lentils and boil until cooked but still firm, rinse thoroughly, mix the rice and lentils together.
    • Remove half the ingredients from the curry pot, mix half the rice and lentils into the pot, stir, repeat this process with the balance of the rice and lentil mix and the remaining curry.
    • Garnish with crispy salad and chutney or a dollop of Greek yogurt or sour cream mixed with finely chopped coriander leaves and a squirt of lemon.

Storage Instructions:

  • Store in a cool, dry place away from direct sunlight.
  • Use within 6 months of opening.
